Tomato Soup Florentine

Here is a quick and easy “almost home made” recipe for tomato soup that will make everyone think you cooked all day.  You can prepare it in 15 minutes while you are making yummy grilled cheeses sandwiches to go with the soup. Sit by the fireplace after dinner and enjoy sipping a nice glass of wine.

olive oil
1 clv
onion (Small)
1 cn
large can of campbell's tomato soup
1 cn
diced tomatoes (Italian Flavored or Garlic and Basil)
1 cn
cannellini beans (Black beans are also good)
1 c
freshly chopped spinach
1 T
dried basil
1⁄4 c
dorchester red wine


Stir-fry onions and garlic until soft in olive oil in large pot. Add the tomato soup using half the suggested water, diced tomatoes, cannellini beans, and basil to pot and bring to simmer over medium heat stirring occasionally for about ten minutes. Add the red wine and chopped spinach to soup and bring back to simmer to cook spinach until wilted. Serve with hot grilled cheese sandwiches.  Serves 4 to 6 people.
