Ingredients

red potatoes 1 T
olive oil 2 clv
garlic (minced) 2 t
oregano (dried) 1⁄2 c
parmesan cheese 2 T

Precook red potatoes in microwave with a small amount of water until fork tender. Drain and slice red potatoes into roughly 1/4″ thick slices. In a large skillet, heat oil over medium heat. Add in garlic and potatoes and sauté. Sprinkle in cheese and oregano and continue to cook until potatoes begin to brown on both sides, 15-25 minutes (depends on the thickness!). Salt with season salt. Remove from heat and serve warm.
