Description

A pork recipe with our wonderful Pardee.

Ingredients

1 lb
pork loin (1-1.5 lbs, sliced thin)
5 T
grape jelly
3 T
mustard
5 T
ketchup
3 T
soy sauce (Kikoman)
3
garlic cloves (Minced (or three tablespoons of Minced Garlic in Oil))
1 c
pardee red wine (try also Concord)
1 c
water
1 ds
salt and pepper
1 T
oil (Splash)

Instructions

Mix all ingredients except pork in a bowl and set aside. Don't worry that the jelly or any of the ingredients look clumpy, as they will melt in. Salt and pepper the sliced pork loin as you would for regular fried pork chops and using a deep skillet (sauce pan). Brown in a splash of oil (if necessary set some of the brown pork aside while the rest is browned). Once all pork is browned, pour ingredients from the bowl over the pork chops and simmer on medium to low heat, stirring occasionally (flipping the pork so the same pieces aren't on the bottom all the time). Cook for approximately 45 minutes to 1 hour or until the sauce has thickened. Allow to cool for about 15 minutes before serving to allow the sauce to thicken.

These are good served over rice, using some of the sauce on the rice or enjoy this recipe by itself. Also, I recommend going with 1.5 pounds of pork because it's hard to stop eating it!
