Fish - Tilapia and Veggies -Foiled

Great white wine recipe! Marinate, Marinate, Marinate!

Ingredients

carrots (peeled and julienned or sliced- divided into fourths)

zucchinis (sliced-divided into fourths for each pouch)

1 t

ginger (fresh, minced, and peeled per pouch )

2 T

fresh basil (divide into fourths)

4 T

olive oil or butter (per pouch)

1 ds

lemon or lime juice (per pouch)

salt and pepper (to taste)

tilapia fillets (1 per person)

Instructions

Marinate Tilapia in MountainRose Vineyards’ Splashdam, Riesling or Blair White for about 20 to 30 minutes. Preheat the oven to 400˚F. Layer ingredients in the order listed over a piece of 13"x10" aluminum foil. Close the aluminum foil to make a sealed "pouch" and bake 12-15 minutes. Description: Perfect with our Blair, Splashdam and Riesling white wines. Note: You can substitute a variety of vegetables, yellow squash, onion, zucchini and tomato with garlic and basil.
